Beef Wellington

  • 1 1/2 lb lean ground beef
  • 1 lb sliced and cleaned mushrooms
  • 1 – 1o 1/2 oz jar beef gravy
  • 1 C seasoned bread cubes
  • 1/4 C diced onion
  • 1 egg
  • pepper to taste
  • 1 can crescent rolls

Preheat oven to 350 degrees.  In a medium skillet, saute mushrooms in olive oil, sprinkled with pepper, until lightly browned and little liquid remains.  In a large bowl, combine ground beef, mushrooms, onion, egg, and bread cubes, add about 1 cup of the gravy to the meat mixture.  Spray a cookie sheet with a 1 inch lip with cooking spray.  Shape meat into a 12 inch loaf in the middle of cookie sheet.  Bake, covered in foil, for 45 minutes.  Remove from oven and make a crust over the meat loaf with the crescent roll dough.  Return to oven, uncovered, for about 15 minutes, or until crust is lightly browned.  Slice and serve with the remaining gravy.  Serves 6.
