Ingredients:

  • 2 large sweet potatoes
  • 2 T Land O’ Lakes Garlic and Herb butter
  • 2 T Fresh grated Parmesan/Asigo Blend cheese
  • Pepper and Basil to taste

Directions:

Scrub sweet potatoes and use a fork to poke holes in them.  Wrap in wax paper.  Microwave on high for about 10 minutes, or until potatoes are soft.  Once potatoes are done, scoop out the pulp into a large bowl.  Add butter, Parmesan blend and pepper.  Mash together until well blended.  Spray a baking sheet, lightly with olive oil.  Scoop out about 1 heaping tablespoon of potato mixture.  Press down into a round circle about 1/4 in thick.  Sprinkle with grated cheese and basil.  Repeat with the rest of the potato mixture.  Preheat oven to broil.  Place in center of oven and broil potatoes until browned on top, flip and brown the other side, if desired.  Watch carefully to avoid burning.  Makes 6 – 8 patties depending on size of potatoes used.

Easy Garden Pasta Salad

Ingredients:

  • 1 – 12 oz bag Veggie Bow Tie pasta
  • 1/2 pkt Zesty Italian dressing mix
  • 1/4 tsp dill weed
  • fresh ground black pepper to taste
  • 1 – 1/2 C light mayo, blended with Almond milk until creamy
  • 2 T finely chopped onion
  • 1/2 C frozen green peas
  • 1 C shredded carrot
  • 1 – 2 C cut up broccoli flowerettes
  • 1 – 2 C sliced grape tomatoes
  • 1/2 C shredded 4 cheese Mexican blend

Directions:

Boil pasta until just done according to directions.  Drain, rinsing with cold water until cooled.  Set aside.  In a small bowl, blend together mayo mixture and seasonings.  Place all cleaned and cut up vegetables in a large bowl, add pasta, coat with mayo and seasoning mixture until completely coated.  Fold in cheese until blended.  Refrigerate until served.

Grandma Pat’s Summer Salad

Ingredients:

  • 1 box spiral noodles (do not use tri-color noodles)
  • 1 medium cucumber, peeled and diced
  • 1 medium tomato, firm – finely diced
  • 1 small brick Velveeta cheese, cubed
  • 1 small can sliced black olives, optional
  • 1 medium can tuna, drained
  • 1 1/2 – 2 C mayonnaise
  • Basil, dill,and pepper to taste
  • Lemon juice

Directions:

Cook noodles according to directions on box and drain.  Cool by rinsing in cold water through strainer. In large bowl, combine cucumber, tomato, cheese and black olives.  In a smaller separate bowl combine, tuna, seasonings, lemon to taste and mayonnaise until blended well.  Fold noodles into the vegetables then fold mayonnaise mixture into vegetables and noodles until well coated.  Refrigerate and serve chilled.

Green Beans with Lemon Pepper

Ingredients:

  • 1 pound fresh green beans, rinsed and trimmed
  • 2 tablespoons butter
  • 1/4 cup sliced almonds
  • 2 teaspoons lemon pepper

Directions:

  • Place green beans in a steamer over 1 inch of boiling water. Cover, and cook until tender but still firm, about 10 minutes; drain.
  • Meanwhile, melt butter in a skillet over medium heat. Saute almonds until lightly browned. Season with lemon pepper. Stir in green beans, and toss to coat.

Creamy Chicken Pasta Salad

Ingredients:

  • 2 C diced, cooked chicken (left over roast chicken works best)
  • 1 packet Zesty Italian dressing mix
  • 1 tsp dill weed (optional – can use basil and oregano if desired)
  • 1 T lemon juice
  • pepper to taste
  • 1 C mayonnaise of choice (use 1 1/2 C for more creamy salad)
  • 1 box bow tie pasta, cooked, drained and cooled
  • 1 small onion, diced fine
  • 1/2 C shredded Parmesan cheese

Directions:

Boil pasta in a large kettle until al dente.  Drain and cool by running cold water over pasta in colander and allowing to drain.  Set aside.  In a large bowl, combine mayonnaise, Zesty Italian dressing mix and other seasonings with lemon juice.  Stir until creamy and well blended.  Add chicken and diced onion.  Fold in pasta.  Add more mayonnaise if a more creamy consistency is desired.  Can add more seasonings to taste, if desired.  Stir in Parmesan cheese.  Serves 6 – 8.  Can be stored in refrigerator for up to a week.  Add more mayonnaise if becomes too dry.

Tomato Mozzarella Salad

Ingredients:

  • 1 small container fresh grape tomatoes, cut in half
  • 1 lb bulk mozzarella cheese, cubed
  • 3 C bow tie pasta, cooked, drained and cooled
  • 1 packet Zesty Italian dressing mix
  • 1/8 C fresh leaf basil, chopped coarsely
  • olive oil
  • 1/4 C Shredded Parmesan/Asiago Cheese
  • Italian seasoning, Oregano, and pepper to taste

Directions:

Boil pasta until al dente, drain and cool under cold running water through strainer.  Set aside to drain completely.  In a large bowl, mix Zesty Italian dressing mix and about 1/4 – 1/2 cup olive oil together, add oregano,  Italian seasoning and pepper to taste.  Stir in pasta, coating thoroughly.  Fold in tomatoes, basil, Parmesan/Asigao and mozzarella cheese.  Serves 6.  Can store for up to a week, add more oil if too dry.

Candied Carrots

Ingredients:

  • 8 oz baby carrots
  • olive oil
  • Basil to taste
  • 1-2 T brown sugar

Directions:

In a large skillet, drizzle olive oil in bottom of pan in a light layer.  Add carrots, brown sugar (sprinkle over carrots), and season to taste with basil.  Saute until carrots are cooked to desired doneness, stirring often to prevent scorching.  Some browning is expected.  Makes about 4 servings.

Garlic & Parmesan Pasta

Ingredients:

  • 1 box small shell pasta
  • 1 clove garlic, pressed
  • 1/2 C butter
  • 1/4 c Parmesan cheese, grated
  • pepper to taste

Directions:

In a medium sized sauce pan, cook pasta according to directions on box.  Drain and set aside.  Melt butter in pan, add garlic and saute until tender and lightly browned.  Return pasta to pan and stir in Parmesan cheese and pepper to taste, completely coating pasta with butter, garlic, and cheese.  Makes about 6 servings.

Butter & Basil Rice

Ingredients:

  • 1 C brown rice
  • 2 chicken bouillon cubes
  • 2 C water
  • 1/4 C butter or margarine (works best with butter)
  • pepper to taste
  • 1 tsp Basil

Directions:

Boil rice in 2 cups water with the bouillon cubes until tender, you may need to add more water if the rice is not tender.  When all but a very small amount of water is gone from the rice (less then about a tablespoon or so), add butter and melt, stirring to make sure rice does not stick to pan.  Remove from heat and stir in pepper and Basil.  Makes 4 servings.
