Crab Salad Sandwiches



  •  1 lb flake style imitation crab
  • 2 T lemon juice
  • 1 packet Zesty Italian Dressing mix
  • 1 tsp dill weed
  • Pepper to taste
  • 1 C mayo
  • Steak rolls
  • Butter
  • Cheese slices


In a large bowl, mix together dill, Italian dressing mix and pepper to taste.  In a small bowl, mix together mayo and lemon juice until thoroughly blended.  Add mayo to seasonings and blend well.  Shred imitation crab meat into bowl and blend together.  Set aside.  Butter a steak roll and set in sauté pan, butter side down and cook on medium high heat until browned.  Spread with crab mixture, about ½ inch thick and add cheese of choice (works well with Colby Jack cheese or Provolone cheese).  Serves 6.

Lighter Side Option:

To reduce the calories use a reduced calorie mayo (watch the sugar!) and no butter on the steak rolls.  To brown the steak rolls, spray them with butter flavor cooking spray instead of spreading with butter, and omit the cheese.  You may also be able to find reduced calorie bread or roll to use instead of the regular rolls.  Can also be used in a whole wheat pita pocket.
