Grandma Pat’s Summer Salad


  • 1 box spiral noodles (do not use tri-color noodles)
  • 1 medium cucumber, peeled and diced
  • 1 medium tomato, firm – finely diced
  • 1 small brick Velveeta cheese, cubed
  • 1 small can sliced black olives, optional
  • 1 medium can tuna, drained
  • 1 1/2 – 2 C mayonnaise
  • Basil, dill,and pepper to taste
  • Lemon juice


Cook noodles according to directions on box and drain.  Cool by rinsing in cold water through strainer. In large bowl, combine cucumber, tomato, cheese and black olives.  In a smaller separate bowl combine, tuna, seasonings, lemon to taste and mayonnaise until blended well.  Fold noodles into the vegetables then fold mayonnaise mixture into vegetables and noodles until well coated.  Refrigerate and serve chilled.
