Grandma Sheri’s Easy Potato Salad


  • 5 lbs russet potatoes, peeled and cut into bite sized chunks
  • 12 hard boiled eggs
  • 1 T fresh chives, diced fine
  • 1-1/2 C Miracle Whip or Mayo
  • 1/2 C yellow mustard
  • salt & pepper to taste
  • Paprika


In a large pot, boil potatoes until just tender, potatoes should be a bit firm.  In a small bowl, blend together mustard and mayo until well blended, set aside.   Cool boiled eggs and potatoes.  remove from shell and dice 8 hard boiled eggs into a large bowl.  Add potatoes and add chives.  Mix in mayo and mustard mixture, add salt and pepper to taste.  Stir until well blended.  Remove from shell and slice remaining eggs into circles.  Arrange over top of potato salad.  Lightly sprinkle with paprika to garnish.
