- 1 package Simply Potatoes Shredded Hash Browns
- 2 T onion, diced fine
- 1/2 lb fresh mushrooms, cleaned and sliced
- 4 – 6 slices bacon, cooked and crumbled
- 1 C diced pre-cooked ham
- 1/2 C shredded Colby/Jack cheese
- pepper to taste
- Butter flavor cooking spray
In a large skillet, sprayed with cooking spray, saute mushrooms and onions until lightly brown, sprinkle with pepper while cooking. Remove from pan and set aside. Coat pan with cooking spray to prevent sticking and add hash browns and spray the top to keep them from sticking while you turn them. Sprinkle with pepper, cook on medium heat until lightly browned, turn to prevent scorching. When potatoes are lightly browned, mix in bacon, mushrooms & onions, and ham. Cook until warmed through. Sprinkle with cheese and stir through to blend. Cook until cheese is melted, about 2 minutes. Serves about 4.
Lighter Side Option: Instead of the ham and regular bacon, use turkey bacon or sausage to reduce the fat and reduced fat cheese should be used instead of regular.
