Soy Chicken


  • 4 boneless, skinless chicken breasts
  • 1/2 C low sodium soy sauce
  • 1/4 C white wine
  • 1 clove garlic, minced
  • 1 T chopped green onion
  • 1 tsp ground fresh ginger
  • 1 tsp dijon mustard


Combine soy sauce, wine, garlic, green onion, ginger & mustard in a bowl.  Place chicken breasts in a container with tight lid for marinating.  Pour the soy sauce mixture over chicken and marinate for 1 hour.  In a skillet, place chicken breasts, reserving marinade, and brown in 2 tablespoons oil.  Add marinade mixture and simmer 20 minutes, covered.  Serve over couscous.  Serves 4.
