Toasted Coconut Almond Ice Cream


  • 1 quart heavy cream or whipping cream
  • 3/4 C lightly toasted shredded coconut
  • 1 T vanilla
  • 1/2 tsp almond extract
  • 3/4 C & 2 T raw sugar
  • 1/2 C semi-sweet chocolate chucks or chips
  • 3 T chopped almonds
  • Rock salt


Prepare an ice cream maker with ice and rock salt per directions on machine for 1 quart machine.  In a bowl combine all ingredients except salt until completely combined.  Pour into machine and blend with machine according to directions, scraping sides occasionally so that all ice cream freezes.  Can be served immediately or frozen.
