Tomato Mozzarella Salad


  • 1 small container fresh grape tomatoes, cut in half
  • 1 lb bulk mozzarella cheese, cubed
  • 3 C bow tie pasta, cooked, drained and cooled
  • 1 packet Zesty Italian dressing mix
  • 1/8 C fresh leaf basil, chopped coarsely
  • olive oil
  • 1/4 C Shredded Parmesan/Asiago Cheese
  • Italian seasoning, Oregano, and pepper to taste


Boil pasta until al dente, drain and cool under cold running water through strainer.  Set aside to drain completely.  In a large bowl, mix Zesty Italian dressing mix and about 1/4 – 1/2 cup olive oil together, add oregano,  Italian seasoning and pepper to taste.  Stir in pasta, coating thoroughly.  Fold in tomatoes, basil, Parmesan/Asigao and mozzarella cheese.  Serves 6.  Can store for up to a week, add more oil if too dry.
