Twice Baked Potatoes

Ingredients:

  •  5 – 6 Large Russet potatoes (baking potatoes), cleaned
  • 1 C sour cream
  • ½ C butter
  • 8 slices of pre-cooked bacon, crumbled
  • 2 C shredded Colby/Jack cheese
  • 2 T fresh chives, chopped
  • Pepper to taste
  • Milk – do not use skim

 Directions:

 Wrap potatoes in wax paper and poke holes to vent, bake in microwave oven until tender, about 15 – 20 min.  Remove skin and place in large mixing bowl with butter and about ½ cup milk, blend with electric mixer, add milk as needed until potatoes are creamy, add pepper and blend through.  Fold in sour cream to taste (you can add more or less then 1 cup as desired).  Fold in bacon and cheese.  Empty contents of bowl into a 9×13 glass baking dish and sprinkle top with chives.  Bake, covered with foil, in preheated 350º oven, for 25 minutes or until cheese is melted.  Allow to cool 5 – 10 minutes.  Serves about 6.
